Ingredients:

  • 1 cup rice (white or brown)
  • 4 cups turkey broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup fresh mushrooms, sliced (such as cremini or button)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  2. Add the sliced mushrooms to the pot and cook until they are softened, about 5 minutes.
  3. Stir in the rice and cook for an additional 2 minutes, allowing it to absorb some flavors.
  4. Pour in the turkey broth and bring to a boil. Reduce heat and let it simmer for about 15-20 minutes, or until the rice is tender.
  5. Stir in the cream of mushroom soup, dried thyme, and dried rosemary. Mix well and let it simmer for another 5 minutes.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
