Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups mushrooms, sliced (such as cremini or button)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and golden, about 5-6 minutes.
  3. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Allow to reduce slightly for about 5 minutes.
  4. Lower the heat, then stir in the heavy cream and thyme. Let the sauce simmer for an additional 3-4 minutes until thickened. Adjust seasoning with salt and pepper as needed.
  5. Return the cooked chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to warm the chicken through.
  6. Serve hot, garnished with fresh parsley.
