Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup sour cream
  • 1 cup grated Parmesan cheese
  • 2 medium onions, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sliced onions. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes. Add minced garlic in the last 2 minutes of cooking.
  3. While the onions are cooking, season the chicken breasts with salt, pepper, and Italian herbs.
  4. In a mixing bowl, combine sour cream and grated Parmesan cheese until well blended.
  5. In a large oven-safe skillet, sear the chicken breasts over medium-high heat for 3-4 minutes on each side until golden brown.
  6. Spread the creamy Parmesan mixture over the seared chicken breasts, then top with the caramelized onions.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven, garnish with fresh parsley, and serve warm.
