Ingredients:

  • 2 chicken breasts, diced
  • 2 tablespoons peanut butter
  • 1 cup coconut milk
  • 1 cup frozen vegetables (carrots, peas, corn mix)
  • 1 white onion, diced
  • 2 cloves garlic, minced
  • 1 avocado, sliced
  • 2 tablespoons soy sauce
  • 8 ounces pasta (spaghetti or your choice)
  • Salt and pepper, to taste
  • Yogurt, for serving (optional)

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.
  3. Add the diced chicken to the skillet and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. Stir in the frozen vegetables and cook for another 3-4 minutes until heated through.
  5. Add the peanut butter, coconut milk, and soy sauce to the skillet. Stir well to combine and let it simmer for 5 minutes, allowing the sauce to thicken slightly.
  6. Toss the cooked pasta into the skillet, mixing well to coat the pasta with the sauce.
