Ingredients:

  • 8 oz whole wheat gnocchi
  • 1 lb shrimp, peeled and deveined
  • 1 cup fresh basil leaves
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Greek yogurt
  • 1 cup peas (fresh or frozen)
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 1/4 tsp red pepper flakes (optional)

Instructions:

  1. Cook the gnocchi according to package instructions. Drain and set aside.
  2. In a blender or food processor, combine basil, olive oil, garlic, Parmesan cheese, Greek yogurt, lemon juice, salt, and pepper. Blend until smooth to create the pesto.
  3. In a large skillet, heat a little olive oil over medium heat. Add the shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque. Season with salt, pepper, and red pepper flakes if using.
  4. Add the peas to the skillet and cook for an additional 2 minutes until warmed through.
  5. Stir in the prepared pesto and cooked gnocchi, mixing well to combine all ingredients. Cook for another minute to heat through.
