Ingredients:

  • 8 oz pasta (your choice)
  • 2 medium potatoes, peeled and diced
  • 4 slices of bacon, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated cheese (such as Parmesan or cheddar)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a separate pot, boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and mash them lightly with a fork.
  3. In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove and drain on paper towels.
  4. In the same skillet, add minced garlic and cook for about 30 seconds until fragrant. Then add the halved cherry tomatoes and fresh rosemary. Sauté for 3-4 minutes until the tomatoes begin to soften.
  5. Stir in the mashed potatoes and heavy cream, mixing well to combine. Add the cooked pasta and crispy bacon to the skillet, tossing everything together until heated through.
  6. Finally, stir in the grated cheese until melted and creamy. Season with salt and pepper to taste.
  7. Serve hot, garnished with extra cheese or rosemary if desired.
