Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup red pesto
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 ounces pasta of your choice (e.g., fettuccine or penne)
  • Fresh basil for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
  3. Season the chicken breasts with salt and pepper. Add them to the skillet and cook for about 6-7 minutes on each side, or until cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  4. In the same skillet, lower the heat and add the red pesto and heavy cream. Stir well to combine and let it simmer for 2-3 minutes until slightly thickened.
  5. Add the grated Parmesan cheese to the sauce, stirring until melted and smooth.
  6. Return the sliced chicken to the skillet and toss to coat in the creamy red pesto sauce.
  7. Add the cooked pasta to the skillet and mix everything together until well combined. Adjust seasoning with salt and pepper if needed.
  8. Serve hot, garnished with fresh basil and extra Parmesan if desired.
