Ingredients:

  • 2 chicken breasts, diced
  • 1 cup red pesto
  • 250g pasta of choice
  • 1 can tinned potatoes, drained and diced
  • 1 can sweetcorn, drained
  • 1 cup cheddar cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken breasts and season with salt and pepper. Cook until the chicken is golden and cooked through, about 5-7 minutes.
  3. Add the tinned potatoes and sweetcorn to the skillet, stirring gently to combine. Cook for an additional 2-3 minutes until heated through.
