Ingredients:

  • 1 cup rice
  • 2 cups milk
  • 1 cup green beans, trimmed
  • 1 medium onion, diced
  • 1 can canned peppers, drained and chopped
  • 4 oz cream cheese, softened
  • 2 tbsp butter
  • 2 tbsp oil
  • 1 packet soup mix (like onion or cream of mushroom)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 cup shredded cheese (optional for topping)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, heat oil and butter over medium heat. Add the diced onion and sauté until translucent.
  3. Stir in the rice and cook for an additional minute, allowing it to absorb the flavors.
  4. In a large mixing bowl, combine the sautéed onion and rice mixture with milk, cream cheese, soup mix, canned peppers, green beans, salt, pepper, garlic powder, and paprika. Mix well until combined.
  5. Transfer the mixture into a greased baking dish. If desired, sprinkle shredded cheese on top.
  6. Cover with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until bubbly and golden on top.
  7. Let it cool for a few minutes before serving.
