Ingredients:

  • 2 cups rotisserie chicken, shredded
  • 8 ounces elbow noodles
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the elbow noodles according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in the shredded rotisserie chicken, dried thyme, and dried oregano. Cook for 2-3 minutes until heated through.
  5. Pour in the chicken broth and bring to a simmer. Add the heavy cream and stir until well combined.
  6. Mix in the cooked elbow noodles and half of the shredded cheese. Season with salt and pepper to taste.
  7. Transfer the mixture to a greased baking dish and sprinkle the remaining cheese and grated Parmesan on top.
  8. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until the cheese is bubbly and golden.
  9. Remove from oven, garnish with fresh parsley, and serve warm.
