Ingredients:

  • 8 oz elbow macaroni
  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 2 cups shredded sharp cheddar cheese
  • 1 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 teaspoon nutmeg
  • 1/4 cup breadcrumbs (for topping)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the chopped spinach and artichokes, cooking until the spinach is wilted, about 2-3 minutes.
  5. Lower the heat, then add the cream cheese, milk, and half of the cheddar cheese. Stir until melted and smooth.
  6. Add the cooked macaroni to the cheese mixture, along with salt, pepper, red pepper flakes, and nutmeg. Mix until well combined.
  7. Transfer the mixture to a greased baking dish. Sprinkle the remaining cheddar cheese and breadcrumbs evenly on top.
  8. Bake in the preheated oven for 20-25 minutes, or until bubbly and golden brown on top.
  9. Let cool for a few minutes before serving.
