Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, washed and chopped
  • 4 cloves garlic, minced
  • 1 cup milk
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and paprika. Add them to the skillet and cook for 6-7 minutes on each side, or until cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add the chopped spinach and cook until wilted, about 2-3 minutes.
  5. Pour in the milk and bring to a gentle simmer. Stir continuously until the mixture thickens slightly.
  6. If using, stir in the Parmesan cheese until melted and well combined.
  7. Return the cooked chicken to the skillet, coating it in the creamy spinach sauce. Cook for an additional 2-3 minutes to heat through.
