Ingredients:

  • 2 chicken breasts
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup fresh spinach, chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and celery, and sauté until softened, about 5 minutes.
  2. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Push the sautéed vegetables to one side of the skillet and add the chicken breasts. Cook for about 6-7 minutes on each side until golden brown and cooked through.
  3. Once the chicken is cooked, remove it from the skillet and set aside. In the same skillet, add the diced tomatoes and heavy cream, stirring to combine. Bring to a simmer.
  4. Stir in the chopped spinach and grated Parmesan cheese, cooking until the spinach is wilted and the sauce is creamy, about 2-3 minutes.
  5. Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional 2 minutes to heat through.
  6. Serve warm, garnished with extra Parmesan if desired.
