Ingredients:

  • 8 ounces pasta (penne or rigatoni)
  • 2 cups fresh spinach, chopped
  • 1 cup grated Parmesan cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup breadcrumbs (optional for topping)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
  6. In a mixing bowl, combine the heavy cream, grated Parmesan cheese, salt, black pepper, and nutmeg.
  7. Add the cooked pasta and spinach mixture to the cream mixture, and stir until well combined.
  8. Transfer the mixture to a greased baking dish. If desired, sprinkle breadcrumbs on top for added crunch.
  9. Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.
