Ingredients:

  • 12 oz pasta (your choice: fettuccine, penne, or spaghetti)
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • Juice of 1/2 lemon
  • Fresh basil leaves for garnish

Instructions:

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Stir in the ricotta cheese and Parmesan cheese, mixing well to combine. Add nutmeg, salt, and pepper to taste.
  5. Gradually add reserved pasta water to the skillet, stirring until the sauce reaches your desired consistency.
  6. Add the cooked pasta to the skillet, tossing to coat evenly with the sauce.
  7. Finish with a squeeze of lemon juice and garnish with fresh basil leaves before serving.
