Ingredients:

  • 300g pasta (penne or fettuccine)
  • 200g fresh spinach, chopped
  • 250g ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 teaspoon nutmeg (optional)
  • Fresh basil leaves for garnish

Instructions:

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Reduce the heat to low and stir in the ricotta cheese, grated Parmesan, lemon zest, lemon juice, and nutmeg. Mix until well combined.
  5. Gradually add reserved pasta water to the sauce to reach desired creaminess. Stir until smooth.
  6. Add the drained pasta to the skillet and toss to coat evenly. Season with salt and black pepper to taste.
  7. Serve hot, garnished with fresh basil leaves and additional Parmesan cheese if desired.
