Ingredients:

  • 300g pasta (penne or fusilli)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 200g fresh spinach, chopped
  • 250g ricotta cheese
  • 50g grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Zest of 1 lemon

Instructions:

  1. Cook the pasta according to package instructions in salted water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes.
  4. In a bowl, combine the ricotta cheese, grated Parmesan, nutmeg, salt, and pepper. Mix until smooth.
  5. Add the cooked pasta to the skillet with the spinach and pour the ricotta mixture over it. Toss gently to combine and heat through.
  6. Serve garnished with fresh basil and lemon zest.
