Ingredients:

  • 12 oz pasta of your choice
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1 clove garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh basil leaves for garnish

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. In a mixing bowl, combine ricotta cheese, heavy cream, grated Parmesan, nutmeg, salt, and pepper. Mix well until smooth.
  5. Add the cooked pasta to the skillet with spinach and pour the ricotta mixture over it. Toss to combine and heat through for about 2-3 minutes.
  6. Serve hot, garnished with fresh basil leaves and extra Parmesan if desired.
