Ingredients:

  • 12 oz pasta (penne or fusilli)
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh basil leaves for garnish

Instructions:

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Stir in the ricotta cheese, heavy cream, and nutmeg. Mix well until the sauce is creamy. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  5. Add the cooked pasta to the skillet and toss to combine. Stir in grated Parmesan cheese and season with salt and pepper to taste.
  6. Serve hot, garnished with fresh basil leaves.
