Ingredients:

  • 2 chicken breasts, diced
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons tomato paste
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 cup broccoli florets
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream
  • 1/2 teaspoon black pepper

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  2. Add the diced chicken to the skillet and season with salt and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  3. Stir in the broccoli florets and sun-dried tomatoes. Cook for an additional 3 minutes until the broccoli is tender.
  4. Add the fresh spinach and cook until wilted.
  5. Mix in the tomato paste and heavy cream, stirring until well combined. Let it simmer for 2-3 minutes.
  6. Remove from heat and stir in the Parmesan cheese until melted and creamy.
  7. Serve warm, garnished with extra Parmesan if desired.
