Ingredients:

  • 2 chicken breasts
  • 1 cup white wine
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • 1/3 cup sun-dried tomatoes, chopped
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon flour
  • 2 tablespoons olive oil

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through. Remove the chicken and set aside.
  3. In the same skillet, add the white wine and deglaze the pan, scraping up any brown bits. Let it simmer for about 2-3 minutes.
  4. Add the chicken stock and sun-dried tomatoes to the skillet, and bring to a gentle simmer.
  5. In a small bowl, mix the flour with a few tablespoons of the simmering liquid to create a slurry. Stir this slurry back into the skillet to thicken the sauce.
  6. Reduce the heat to low and stir in the heavy cream. Allow the sauce to simmer gently for another 3-5 minutes until it thickens slightly.
  7. Return the chicken to the skillet, coating it with the creamy sauce. Cook for an additional 2 minutes to heat through.
  8. Serve hot, garnished with extra sun-dried tomatoes if desired.
