Ingredients:

  • 2 chicken breasts
  • 1 cup white wine
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • Salt to taste
  • Pepper to taste
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil

Instructions:

  1. Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off any excess.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and sear until golden brown on both sides, about 4-5 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add the white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for about 2-3 minutes to reduce slightly.
  4. Stir in the chicken stock and sun-dried tomatoes, then return the chicken breasts to the skillet. Cover and simmer for 10 minutes, or until the chicken is cooked through.
  5. Remove the chicken again and stir in the heavy cream. Cook for an additional 5 minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper as needed.
  6. Serve the chicken with the creamy sauce poured over the top.
