Ingredients:

  • 8 oz pasta (spaghetti or fettuccine)
  • 1 onion, finely chopped
  • 3 cloves minced garlic
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 1 tablespoon Thai curry paste
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. Cook the pasta according to package instructions. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms are tender, about 4-5 minutes.
  4. Stir in the Thai curry paste and cook for another minute to release its flavors.
  5. Pour in the chicken stock and bring to a simmer. Let it cook for about 3-4 minutes.
  6. Reduce the heat to low and add the heavy cream, stirring until well combined. Allow the sauce to thicken slightly.
  7. Add the fresh spinach and cook until wilted, about 2 minutes.
  8. Toss in the cooked pasta, combining everything well. If the sauce is too thick, add reserved pasta water a little at a time until you reach desired consistency.
  9. Stir in the grated Parmesan cheese, and season with salt and pepper to taste.
  10. Serve warm, garnished with additional Parmesan if desired.
