Creamy Tomato Chicken Gnocchi

Ingredients:

  • 1 pound gnocchi
  • 1 pound boneless, skinless chicken breasts, cubed
  • 2 cups tomato puree
  • 1 cup plain yogurt
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the cubed chicken and cook until golden brown and cooked through, about 5-7 minutes.
  3. Add the minced garlic to the skillet and sauté for an additional minute until fragrant.
  4. Stir in the tomato puree, oregano, basil, salt, and pepper. Allow the sauce to simmer for about 5 minutes.
  5. Add the cooked gnocchi to the skillet and stir gently to combine, allowing the gnocchi to absorb some of the sauce.
  6. Remove from heat and stir in the yogurt until creamy. Adjust seasoning if necessary.
  7. Serve hot, garnished with fresh basil leaves.
