Ingredients:

  • 2 chicken breasts, diced
  • 1 cup tomato paste
  • 1 cup heavy cream
  • 2 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 1 cup spinach, fresh
  • 1 cup cheese (cheddar or mozzarella), shredded
  • 2 tablespoons flour
  • 3 tablespoons butter
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. In a large pot, bring water to a boil and add the cubed potatoes. Cook until tender, about 15-20 minutes. Drain and mash with 2 tablespoons of butter, salt, and pepper. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

  4. Stir in the flour and cook for an additional minute, then add the tomato paste and heavy cream. Stir until well combined.

  6. Remove from heat and stir in the shredded cheese until melted and creamy.
