Ingredients:

  • 8 oz pasta (your choice)
  • 1 can (14.75 oz) canned salmon, drained and flaked
  • 1/2 cup tomato pesto
  • 1 cup cooked black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the cooked black beans and sauté for 2-3 minutes until heated through.
  3. Add the flaked canned salmon and tomato pesto to the skillet, stirring to combine. Cook for another 2-3 minutes until warmed.
  4. Reduce the heat to low and add the cooked pasta and half of the shredded cheddar cheese, stirring until the cheese is melted and everything is well combined. Season with salt and pepper to taste.
  5. Serve immediately, topped with the remaining cheddar cheese and fresh basil if desired.
