Ingredients:

  • 8 ounces elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Gruyere cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon truffle oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until bubbling.
  4. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5-7 minutes.
  5. Remove from heat and stir in the cheddar, Gruyere, and Parmesan cheeses until melted and smooth.
  6. Add the truffle oil, garlic powder, onion powder, salt, and pepper. Mix well to combine.
  7. Fold in the cooked macaroni until well coated with the cheese sauce.
  8. If desired, transfer the mac and cheese to a greased baking dish, top with breadcrumbs, and bake for 15-20 minutes until golden and bubbly.
  9. Garnish with fresh parsley before serving.
