Ingredients:

  • 4 chicken thighs, boneless and skinless
  • 2 cups pasta (fettuccine or penne)
  • 1 cup white wine
  • 4 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup Italian cheese (like Parmesan or Pecorino, grated)
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Season the chicken thighs with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining butter. Once melted, sprinkle in the flour and whisk to combine, cooking for about 1 minute.
  5. Gradually pour in the white wine, whisking continuously until the mixture thickens, about 3-4 minutes.
  6. Stir in the grated Italian cheese until melted and smooth. If the sauce is too thick, add a little pasta water to reach the desired consistency.
  7. Slice the cooked chicken and return it to the skillet, tossing to coat in the creamy sauce.
  8. Add the cooked pasta to the skillet and mix well to combine everything evenly. Adjust seasoning with salt and pepper as needed.
  9. Serve hot, garnished with fresh parsley.
