Ingredients:

  • 500g boneless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons tikka masala spice blend
  • 1 tablespoon lemon juice
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 can (400g) diced tomatoes
  • 1 cup coconut milk
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro for garnish
  • 1 cup basmati rice
  • 1 cup coconut milk (for rice)
  • 1 cup water
  • 1 teaspoon salt (for rice)

Instructions:

  1. In a large bowl, mix the yogurt, tikka masala spice blend, lemon juice, and salt. Add the chicken pieces, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
  2. In a pan over medium heat, heat the vegetable oil. Add the chopped onion and sauté until golden brown.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the marinated chicken to the pan and cook until browned on all sides, about 5-7 minutes.
  5. Pour in the diced tomatoes and coconut milk, stirring to combine. Bring to a simmer, then reduce the heat and let it cook for 15-20 minutes until the chicken is cooked through and the sauce is thickened. Stir in the garam masala and adjust salt to taste.
  6. Meanwhile, rinse the basmati rice under cold water until the water runs clear. In a separate pot, combine the rice, coconut milk, water, and salt. Bring to a boil, then reduce the heat to low, cover, and cook for 15 minutes or until the rice is tender and the liquid is absorbed.
  7. Serve the Chicken Tikka Masala over a bed of coconut rice, garnished with fresh cilantro.
