Ingredients:

  • 1 cup sushi rice
  • 1 1/2 cups water
  • 8 oz fresh salmon, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 avocado, sliced
  • 1/2 cucumber, thinly sliced
  • 2 scallions, chopped
  • 1 tablespoon sesame seeds
  • Pickled ginger (optional, for serving)

Instructions:

  1. Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot, and cook according to the package instructions.
  2. While the rice is cooking, prepare the salmon. In a bowl, mix the diced salmon with soy sauce and sesame oil. Allow to marinate for about 10-15 minutes.
  3. Once the rice is cooked, fluff it with a fork and let it cool slightly.
  4. To assemble the poke bowl, divide the rice among serving bowls. Top each bowl with the marinated salmon, sliced avocado, cucumber, and chopped scallions.
