Ingredients:

  • 2 cups Bomba rice
  • 4 cups seafood broth
  • 1/2 teaspoon saffron threads
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup green peas (fresh or frozen)
  • 1/2 pound chorizo, sliced
  • 1 pound shrimp, peeled and deveined
  • 1 pound mussels, cleaned
  • 1 lemon, juiced and zested
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. In a small bowl, soak the saffron threads in 1/4 cup of warm seafood broth for about 10 minutes.
  2. In a large paella pan or skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent.
  3. Stir in the diced red bell pepper and chorizo, cooking until the chorizo is browned.
  4. Add the rice to the pan, stirring to coat it in the oil and mix with the vegetables and chorizo.
  5. Pour in the seafood broth, saffron mixture, smoked paprika, and lemon juice. Season with salt and pepper. Bring to a simmer.
  6. Reduce heat to low and let the rice cook uncovered for about 15 minutes, without stirring.
  7. After 15 minutes, add the shrimp and mussels on top of the rice. Cover the pan with a lid or foil and cook for an additional 10 minutes, or until the seafood is cooked through and the rice has absorbed all the liquid.
  8. Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork, garnish with fresh parsley and lemon zest, and serve.
