Ingredients:

  • 4 medium-sized Yukon Gold potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Zest and juice of 1 lemon
  • Fresh parsley, chopped for garnish
