Ingredients:

  • 4 large russet potatoes
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt to taste
  • 1 cup cold water
  • Vegetable oil for frying
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped

Instructions:

  1. Peel the russet potatoes and cut them into thick fries.
  2. Soak the cut fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.
  3. In a mixing bowl, combine the flour, baking powder, garlic powder, onion powder, paprika, and salt.
  4. Gradually whisk in the cold water until the batter is smooth and slightly thick.
  5. Heat the vegetable oil in a large pot or deep fryer to 350°F (175°C).
  6. Dip each potato fry into the batter, allowing excess to drip off, and carefully place them in the hot oil.
  7. Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
  8. In a small bowl, mix the chopped herbs with a pinch of salt to create the herb salt.
  9. While the fries are still hot, sprinkle them generously with the herb salt before serving.
