Ingredients:

  • 4 large russet potatoes
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 cup cold sparkling water
  • Vegetable oil for frying
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1/2 teaspoon sea salt

Instructions:

  1. Peel and cut the russet potatoes into thick fries. Soak them in cold water for at least 30 minutes to remove excess starch.
  2. In a mixing bowl, combine the flour, baking powder, garlic powder, paprika, and salt.
  3. Slowly whisk in the cold sparkling water until the batter is smooth and slightly bubbly.
  4. Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C).
  5. Drain the potato fries and pat them dry with a paper towel. This will help achieve maximum crispiness.
  6. Dip each fry into the batter, allowing excess to drip off, and carefully place them in the hot oil. Fry in batches to avoid overcrowding.
  7. Fry the fries for about 5-7 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  8. In a small bowl, mix the chopped parsley, rosemary, and sea salt. Sprinkle the herb salt over the hot fries before serving.
