Ingredients:

  • 1 lb chicken tenders
  • 1 cup cauliflower florets
  • 1 cup frozen peas
  • 1 medium onion, sliced
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup breadcrumbs
  • 1/2 cup flour
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for roasting and sautéing

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, season the flour with garlic powder, paprika, salt, and pepper.
  3. Dredge the chicken tenders in the seasoned flour, dip them in beaten eggs, and coat with breadcrumbs.
  4. Arrange the coated chicken tenders on a baking sheet lined with parchment paper and drizzle with olive oil.
  5. In a separate bowl, toss the cauliflower florets with olive oil, salt, and pepper, and spread them on another baking sheet.
  6. Roast the chicken tenders and cauliflower in the oven for about 20-25 minutes, or until the chicken is golden and cooked through, and the cauliflower is tender and slightly caramelized.
  7. Meanwhile, in a skillet, heat a little olive oil over medium heat and sauté the sliced onions until they are soft and translucent.
  8. Add the corn and peas to the skillet with the onions, season with salt and pepper, and cook until heated through, about 3-4 minutes.
