Ingredients:

  • 1 cup crickets, cleaned and roasted
  • 8 small corn tortillas
  • 1 ripe avocado, diced
  • 1 small red onion, finely chopped
  • 1 lime, juiced
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for frying

Instructions:

  1. In a bowl, combine the diced avocado, red onion, cilantro, lime juice, jalapeño, salt, and pepper to make the avocado salsa. Set aside.
  2. Heat olive oil in a skillet over medium heat. Fry the corn tortillas for about 30 seconds on each side until they are crispy. Remove and drain on paper towels.
  3. In the same skillet, add the roasted crickets and sauté for 2-3 minutes until they are heated through and crispy.
  4. To assemble the tacos, place a generous amount of crickets on each tortilla and top with the avocado salsa.
  5. Serve immediately with lime wedges on the side.
