Ingredients:

  • 200g halloumi cheese, grated
  • 2 medium potatoes, peeled and grated
  • 200g cabbage, finely shredded
  • 2 cloves garlic, minced
  • 100g all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. In a large bowl, combine the grated potatoes, grated halloumi, flour, and eggs. Mix until well combined. Season with salt and pepper.
  2. Form the mixture into small patties, about 1 inch thick.
  3. Heat olive oil in a large skillet over medium heat. Fry the potato cakes in batches until golden brown and crispy, about 4-5 minutes per side.
  4. While the cakes are cooking, heat a separate pan over medium heat. Add a little olive oil and sauté the minced garlic until fragrant, then add the shredded cabbage. Cook until the cabbage is tender, about 5-7 minutes. Season with salt and pepper.
