Ingredients:

  • 1 pound chicken breasts, cut into strips
  • 1 cup breadcrumbs (preferably whole wheat)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon mayonnaise
  • Cooking spray or olive oil for drizzling

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, thyme, paprika, salt, and pepper.
  3. In another bowl, whisk the eggs until well beaten.
  4. Dip each chicken strip first into the egg mixture, then coat with the breadcrumb mixture, pressing to adhere.
