Ingredients:

  • 4 chicken pieces (legs and thighs)
  • 1 cup buttermilk
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 cup all-purpose flour
  • 1/2 cup corn starch
  • Vegetable oil for frying
  • Lemon wedges for serving

Instructions:

  1. In a large bowl, combine buttermilk, garlic powder, onion powder, paprika, black pepper, salt, cayenne pepper, thyme, and oregano. Add the chicken pieces, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.
  2. In a separate bowl, mix the all-purpose flour and corn starch. Remove the marinated chicken from the refrigerator and let it sit at room temperature for 15 minutes.
  3. Heat vegetable oil in a deep frying pan over medium heat until it reaches 350°F (175°C).
  4. Dredge each piece of chicken in the flour-cornstarch mixture, shaking off any excess.
  5. Carefully place the chicken in the hot oil, frying in batches if necessary. Cook for about 12-15 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 74°C).
  6. Remove the chicken and place it on a paper towel-lined plate to drain excess oil.
  7. Serve hot with lemon wedges for squeezing over the chicken.
