  • 4 breakfast sausages
  • 4 large eggs
  • 1/4 cup evaporated milk
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Slice the croissants in half and place them on a baking sheet, cut side up.
  3. In a skillet over medium heat, cook the breakfast sausages until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  4. In a bowl, whisk together the eggs, evaporated milk, salt, and pepper until well combined.
  5. In the same skillet, pour in the egg mixture and cook over medium-low heat, stirring gently until the eggs are soft and scrambled, about 3-4 minutes.
  6. Assemble the sandwiches by placing a sausage patty on the bottom half of each croissant, followed by a generous scoop of the scrambled eggs.
  7. Top with the other half of the croissant and place in the oven for 5-7 minutes to warm through.
  8. Serve warm, garnished with fresh herbs if desired.
