Ingredients:

  • 4 medium cucumbers, thinly sliced
  • 1 cup BBQ sauce (your choice of flavor)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced cucumbers, diced red onion, corn, parsley, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Add the BBQ sauce to the cucumber mixture and stir until everything is evenly coated.
  4. In a greased casserole dish, layer half of the cucumber mixture, followed by half of the cheddar cheese. Repeat with the remaining mixture and cheese.
  5. If using, sprinkle breadcrumbs on top for a crunchy finish.
  6. Drizzle olive oil over the top to help the breadcrumbs brown.
  7. Cover the dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.
