Ingredients:

  • 1 lb chicken thighs, boneless and skinless
  • 2 tablespoons cumin powder
  • 1 tablespoon turmeric powder
  • 1 tablespoon fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup basmati rice
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a bowl, mix cumin, turmeric, ginger, minced garlic, olive oil, salt, and pepper to create a marinade.
  2. Add the chicken thighs to the marinade, coating them well. Let it marinate for at least 30 minutes (or up to 2 hours for more flavor).
  3. In a saucepan, heat a little olive oil and add the basmati rice. Stir for a couple of minutes until slightly toasted.
  4. Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes or until rice is cooked.
  5. While the rice is cooking, grill the marinated chicken thighs over medium heat for about 6-7 minutes on each side, or until fully cooked.
  6. Once the chicken is done, let it rest for a few minutes before slicing.
  7. Serve the sliced chicken over the garlic rice, garnished with fresh cilantro.
