Ingredients:

  • 1 lb pork shoulder, diced
  • 1 cup sauerkraut, drained
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Fresh cilantro for garnish
  • Lime wedges for serving
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1 jalapeño, minced
  • 1 tbsp fresh lime juice

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the diced pork shoulder to the skillet. Season with smoked paprika, cumin, salt, and pepper. Cook until the pork is browned and cooked through, about 10-12 minutes.
  3. Stir in the sauerkraut and cook for an additional 5 minutes to heat through.
  4. In a separate bowl, combine diced tomatoes, red onion, jalapeño, and lime juice to make the salsa. Season with salt to taste.
  5. Warm the corn tortillas in a dry skillet or microwave until pliable.
  6. Assemble the tacos by placing a generous spoonful of the pork and sauerkraut mixture on each tortilla. Top with fresh salsa and garnish with cilantro.
  7. Serve with lime wedges on the side.
