Czech Stuffed Cabbage Rolls

This traditional Czech dish combines tender cabbage leaves with a flavorful filling of seasoned ground meat and rice, topped with a rich tomato sauce. Ingredients:

  • 1 large head of cabbage
  • 1 lb ground beef or pork
  • 1 cup cooked rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (15 oz) tomato sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon vinegar
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions:

  1. Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage and blanch the leaves in boiling water for about 2-3 minutes until softened. Remove and let cool.
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until softened.
  3. In a large bowl, combine the ground meat, cooked rice, sautéed onions and garlic, smoked paprika, thyme, salt, and pepper. Mix well.
  4. Lay a cabbage leaf flat and place about 2 tablespoons of the filling at the base of the leaf. Roll up tightly, tucking in the sides to secure the filling. Repeat with remaining leaves and filling.
  5. In a large pot, mix the tomato sauce, brown sugar, and vinegar. Place the cabbage rolls seam-side down in the pot, pouring any remaining sauce over the top.
  6. Cover and simmer on low heat for about 45 minutes until the rolls are cooked through.
  7. Serve hot, garnished with fresh parsley.
