Ingredients:

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons sweet paprika
  • 1 teaspoon smoked paprika
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for another 1-2 minutes until fragrant.
  3. Season the chicken thighs with salt, pepper, and both types of paprika. Add them to the skillet and brown on both sides, about 4-5 minutes per side.
  4. Pour in the chicken broth, cover the skillet, and let it simmer for 25 minutes, or until the chicken is cooked through and tender.
  5. Meanwhile, cook egg noodles according to package instructions. Drain and set aside.
  6. In a small bowl, combine sour cream, ground cumin, and dried thyme. Stir well to blend the spices into the sour cream.
  7. Once the chicken is done, remove it from the skillet and shred it or cut it into chunks. Return it to the skillet and stir in the spiced sour cream mixture until well combined.
  8. Serve the chicken paprikash over a bed of egg noodles, garnished with fresh parsley.
