Ingredients:

  • 1 pound lean ground beef
  • 4 cups green cabbage, shredded
  • 2 medium carrots, julienned
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (low-sodium)
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 ounces whole wheat noodles or shirataki noodles
  • 2 tablespoons fresh cilantro, chopped (for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground beef, soy sauce, sesame oil, ground ginger, black pepper, and red pepper flakes. Mix until well combined.
  3. Spread the beef mixture evenly on a large sheet pan and bake for 10 minutes.
  4. While the beef is baking, cook the whole wheat noodles according to package instructions; drain and set aside.
  5. After 10 minutes, remove the sheet pan from the oven and add the cabbage, carrots, onion, and garlic. Toss everything together to combine.
  6. Return the sheet pan to the oven and bake for another 15-20 minutes, or until the vegetables are tender and the beef is cooked through.
  7. Once done, remove from the oven and toss in the cooked noodles until everything is well mixed.
  8. Garnish with fresh cilantro before serving.
