Ingredients:

  • 1.5 lbs chicken breasts, chopped
  • 4 cups chicken broth
  • 2 jalapeno peppers, chopped (seeds removed for less heat)
  • 1 cup fresh Roma tomatoes, diced
  • 1/2 cup fresh parsley, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions:

  1. In a large pot over medium heat, add a splash of water or broth and sauté the diced onion until translucent, about 5 minutes.
  2. Add minced garlic and chopped jalapeño peppers, cooking for an additional 2 minutes until fragrant.
  3. Stir in the chopped chicken breasts, cooking until they are no longer pink, about 5-7 minutes.
  4. Add the diced Roma tomatoes, chicken broth, cumin, chili powder, salt, and pepper. Bring to a boil.
  5. Reduce heat and let the chili simmer for 20-25 minutes, allowing the flavors to meld together.
  6. In the last 5 minutes of cooking, stir in the chopped parsley for freshness.
  7. Serve hot, garnished with additional parsley if desired.
