Ingredients:

  • 2 lbs chicken breasts, chopped
  • 4 cups chicken broth
  • 2 jalapeno peppers, diced
  • 1 cup fresh Roma tomatoes, diced
  • 1 can (15 oz) canned corn, drained
  • 1/2 cup fresh parsley, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions:

  1. In a large pot over medium heat, add the chopped chicken breasts and cook until browned, about 5-7 minutes.
  2. Add the diced jalapeno peppers and continue to cook for another 2-3 minutes until they soften.
  3. Stir in the diced Roma tomatoes, canned corn, cumin, chili powder, salt, and pepper.
  4. Pour in the chicken broth, bringing the mixture to a boil.
  5. Reduce the heat to low and let it simmer for 20-25 minutes, allowing the flavors to meld together.
