Ingredients:

  • 2 pounds chicken breasts, chopped
  • 4 cups chicken broth
  • 2 jalapeno peppers, diced
  • 1 cup fresh parsley, chopped
  • 4 fresh Roma tomatoes, diced
  • 1 can (15 oz) corn, drained
  • 1 large onion, chopped
  • Salt and pepper to taste
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika

Instructions:

  1. In a large pot, heat over medium heat and add the chopped onion. Sauté until the onion is translucent, about 5 minutes.
  2. Add the chopped chicken breasts to the pot and cook until they are no longer pink, about 7-10 minutes.
  3. Stir in the diced jalapeno peppers, cumin, and smoked paprika, cooking for an additional 2-3 minutes to release the spices' flavors.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Once boiling, reduce the heat and add the diced Roma tomatoes and canned corn. Stir well to combine.
  6. Simmer the chili for about 20-25 minutes, allowing the flavors to meld together. Stir occasionally.
  7. Season with salt and pepper to taste.
  8. Before serving, stir in the chopped parsley for a fresh finish.
  9. Serve hot, garnished with additional parsley if desired.
