Ingredients:

  • 3 cups durum wheat flour
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 1 tablespoon active dry yeast
  • 1 1/4 cups warm water
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon garlic powder

Instructions:

  1. In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the durum wheat flour, all-purpose flour, salt, oregano, thyme, and garlic powder.
  3. Make a well in the center of the dry ingredients and add the frothy yeast mixture and olive oil.
  4. Mix until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat the oven to 375°F (190°C).
  7. Punch down the risen dough and shape it into a loaf. Place it in a greased loaf pan or on a baking sheet.
  8. Cover and let it rise again for about 30 minutes.
  9. Bake in the preheated oven for 25-30 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.
  10. Remove from the oven and let cool on a wire rack before slicing.
